What’s a marinade? An acidic liquid with added flavours that tenderizes and enhances the taste of meat. The process can take seconds or days but here is an easy one where you simply brush some chicken portions in a spicy mixture. My choice is 2 teaspoons each of oil, soy sauce, dark brown sugar, lemon juice and paprika, mixed with 4 teaspoons of tomato puree. (For a hotter version add cayenne pepper or chilli powder). This will cover about 8 wings, legs or thighs. . To get the charred effect, grill over a flame until the juices run clear (no pink chicken flesh, please). Easier still, if you don’t have a barbecue or powerful home grill, roast in a hot oven (200C/400F) for about 30 minutes.
