Having recommended the book with hundreds of barbecue recipes, here is a really quick steak that’s grilled indoors.
I have one of those electric grills that open up and you sizzle the meat for about 3 minutes to give it the charred lines outside and just enough cooking inside for the steak to be rare.
There are no rules for how to marinade it: it’s up to you to stir up a concoction that will add a little flavour. I use a few spoonfuls of olive oil, something with a bit of heat: paprika, chilli powder or barbecue spice, maybe a bit of tomato puree and a dash of something sweet like dark brown sugar or honey. Rub this over both sides of the meat, leave it to stand for an hour or so and then…. the brief cooking.
